35 degrees and my stove gets hotter..

hey everyone out there!

no, i’ve not been killed by some aliens, i just had tons of things to do.

but things DID include some baking!🙂

it’s getting hotter every day here in Austria, and some of my friends really thought i’d gone crazy, for i still wanted to make some yummy treats..but hey- that’s me, right?

luckily i kinda “found” another person who is just as crazy for the hot, hot stove as I am – who wound have thought that was possible? – it’s my friend Sophie!🙂

so the two of us met last week and we made three yummy, vegan snacks. by the way, Sophie just switched to vegetarian and was happy to try some vegan  dessert-recipes with me!

we started with the “genious blondies” by Katie(chocolatecoveredkatie.com). in the end Sophie thought that they tasted too much like chickpeas, which is the main ingredient, but i have to admit that i TOTALLY love them!!🙂

the second thing we tried was a cookie recipe i found,.

I call them

“BEANIE WEANIES”

– 2,5 c. ground oats

-1 t baking powder

-1/2 t baking soda (natron)

-3 T cinnamon

-dash of salt

-1 c. canned white beans(mashed in a food processor)

– 1/3 c. applesauce

-1/2 – 1 c. maple syrup/sugar

*chocolate chips/ berries


–> Sophie and me just added fresh berries and choc.-chips to the cookie dough when portioned on the baking sheet. i think we doubled the recipe and made a bunch of small cookies and a huge one- “MAMA COOKIE“!😉

these cookies are super healthy: they give you protein(thanks to the beans), vitamins and minerals plus they don’t include any fat!

oh, and they’re cruelty-free! 

the third treat we tried were gluten free banana-muffins.

the recipe includes rice-flour, but i won’t post the recipe for most of the taste-testers thought they were too “banany” and tasted kinda” bready”.

yes, we filled them with berries too!🙂

well, my dear readers, today my family is coming hme from a short lake-trip, and i decided to surprise them with

a very fruity cake!

here’s the recipe:

-2 c. flour

-1 c. oats

-1 t baking powder

-dash of salt

-1 c. applesauce

-2 T cinnamon

-1 T carob-powder

-5 T maple syrup

-4 t cornstarch

–> mix all the above-listed ingredients to make the dough. then cut about 4 cups of fresh fruit(i chose peaches, apricots and berries) into small bites and mix them in a seperate bowl.

oil a cakepan and put in the dough. then add the fruit on top of the dough and drizzle some maplesyrup on the fruit.

bake the whole thing for about 35 min. at 270 degrees(celsius). let it cool and then cut into pieces.

it’s delicious!!:)

  1. wow, da habt ihr ja echt so einiges gebacken!! ich les katies blog auch, die chickpea bäckereien muss ich noch versuchen, mit bohnen funktionierts ja sehr gut, das hab ich schon probiert!! (bin ja auch so eine verrückte die im sommer den ofen anheizt ;-))

  2. oh ja, das kannst du laut sagen!🙂
    hab ja zuhause leider kein gerät dass die bohnen/erbsen so schön klein kriegt, daher hab ich das ordentlich ausnützen müssen! :))
